Gazpacho (Cold)

Soak:

  • 1 small onion, finely chopped
  • 4 cloves garlic, minced with a garlic press
  • 2-3T balsamic vinegar
  • 1t kosher salt
  • 1t ground pepper
  • 1-2T olive oil
for 30 minutes, to mellow the onions.

Blend the onion garlic mixture with:

  • 1 cucumber, peeled
  • 4 large tomatoes, peeled
  • 3 peppers, mix of colors
  • 2-3 slices of stale white bread

Refrigerate two hours and serve.

Wikipedia has an interesting article about Gazpacho soup, which it defines as soup made with stale bread, garlic, olive oil, salt, and vinegar, but not necessarily tomatoe and cucumber.
